Ingredients
  

For the spice blend
  • 3/4 tsp salt
  • 1/2 tsp pepper (freshly ground preferred for more flavor)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp chili powder (I prefer McCormick for consistent heat)
  • 1 tbsp paprika
  • 1/2 tsp cayenne
  • 1/2 tsp dry mustard
For the sauce base
  • 1/2 cup apricot jam (I use Smucker's for the best fruit-to-sugar balance)
  • 1 cup ketchup (I always use Heinz for the classic BBQ tang)
  • 1/4 cup honey
  • 1/3 cup brown sugar
  • 2 tbsp worcestershire sauce
  • 2 tbsp cider vinegar

Method
 

  1. In a small bowl, combine all the dry spices: salt, pepper, garlic powder, onion powder, chili powder, paprika, cayenne, and dry mustard. Mix thoroughly to ensure even distribution—this blooming step helps the spices distribute evenly throughout the sauce and prevents any one flavor from dominating. Set aside while you gather your wet ingredients.
  2. In a medium saucepan, add the apricot jam, ketchup, honey, and brown sugar. Whisk together over medium heat, breaking up any chunks of jam and allowing the honey and brown sugar to begin dissolving. This creates a smooth, cohesive base before adding the spices. I like to use a whisk here rather than a spoon—it helps incorporate the ingredients more quickly and prevents lumps from forming.
  3. Add the spice blend from Step 1 to the sauce base, stirring constantly to fully incorporate. Then add the worcestershire sauce and cider vinegar, which add depth and balance the sweetness of the jam and honey. Continue stirring over medium heat for 2-3 minutes, allowing all the flavors to marry together. The sauce should smell fragrant and well-rounded at this point.
  4. Reduce the heat to medium-low and let the sauce simmer gently for 5-8 minutes, stirring occasionally. This low, slow heating allows the flavors to deepen and meld without the sauce reducing too much or burning on the bottom. The sauce will thicken slightly as it cools. I always taste it during this phase—if you want it sweeter, add a touch more honey; if you want more heat, add a pinch more cayenne.
  5. Remove the sauce from heat and let it cool for 10-15 minutes before serving. The sauce will continue to thicken as it cools, reaching its ideal brush-on consistency. If you're making this ahead, transfer it to a clean jar and refrigerate for up to two weeks—the flavors actually improve after a day as they continue to blend.
